Hey, so during my "cannon" playthrough I played as default Shep and a paragon soldier, pretty standard. I'm finally going back to play through the 3 games as a renegade but was wondering what is another fun class to play. Would also be great if I could get build suggestions.

All classes can be fun.
As for what class you should play as? Who knows. Check out this thread if want answers... maybe: "What class Should I do?" by Aynien. You are only one of many to ask that question... and immediately get six suggestions, one for each class.
As for build suggestions, have you actually checked out this thread that is stickied at the top of this forum?: List of Strategy Guides Found on the Forum.

But going Engineer or Adept will be the most different from what you just did (across the trilogy) if you want to mix it up.
