If you were to choose any one of the games to make the cut, then which would you choose?

I personally would've used ME2, though I feel ME1 is more applicable to this list since it started out as an Xbox exclusive. Or maybe I just would've included all three on the list.

Honestly since this triology is probably my favorite of all time, barely beating Halo, I would have included all three as well. But if had to choose ME1 would probably be it if they remade it. ME1 and ME2 both have major flaws IMO.
Like for instance, you mentioned before, the preset environements made the first feel, at some times, repatative. Combat was boringly slow. The open worldness of it though, was a good selling point to me. It was just so fresh to me than what I was usually playing, I just loved it. It fell so new. The dull colors and the lack of decent combat mechanics was terrible. For instance, on my insanity playthrough on my soldier, all id have to do was stand there shooting and spaming immunity. I had mods that made it so I could shoot forever, with 100% percent accuracy, which was extremely boring just standing there and shooting something until it dies.

ME2 on the other hand had great combat, as well as being the mother of all side missions. The worst thing about it was, IMO, was scanning planets, I would literally have to scan for about 45 minutes to and hour getting all I need to upgrade the Normandy. Id rather have it like a mini game instead of scanning, like hacking on ME1. DLC on ME2 was my favorite. Especially Layer of the Shadow Broker. Which extremely awesome for Liaramancers like myself. Being on the ship, I would occasionaly look at the storm, beautiful scenery. Which was another thing, the scenery just made the game gorgeous. Especially on the DLC where you had to save David. I forget its name.

ME3 wouldn't even be on my list.

Who said I support the removal?  I don't support copy and paste planets and advertising that as "exploration" - I understand it from a budget aspect and resource mangement, but I can live without that "illusion" of exploration for more quality content.  Again, same thing with the inventory.  ME2 and ME3 had items, sure not to the extent that ME1 did, but how much is considered to be the norm for an RPG?  The only thing I missed from ME1's leveling up system was the charm system, which I found a good relation to the conversation gameplay, which helped develop a better Shepard, compared to the changes in ME2 - into ME3.  I won't miss having 300 Avenger X' because the Geth use human weapons.  And also - the Mass Effect series never strived to be a full blown RPG in the traditional sense or at least - that's how the advertisement felt to me.
