So why do we play default Hawke first? (storywise)

The first brief version Varric tells the story it's default Hawke and he says it's the story everyone hears, then he says he'll give Cassandra the real story and then you can optionally customize. Lets say you make your Hawke have the darkest skintone; is there some sort of racial tension with Rivainis or does it just become assumpiton because he/she's from Ferelden? Or if you use the lightest skintone without a beard or with a different beard, or you make Marian's nose slightly thinner, does everyone have something against pale people, certain choices in facial hair, and small noses? >.<

Well, the actual answer is that they just didn't want to put the character creator before the Action Prologue, which doubles as a tutorial.
Story-wise, Varric is merely describing the popular perception of Hawke. It's a common phenomenon when it comes to larger-than-life figures.
