I know race does not really fit in with Shepard as it is only for appearence sake. But what would you class your Shepard's skin colour and other facial features under? This is strictly coming from the player's imagination.
I have played as a white male Shepard most of the time cause I am a white male, but until just recently I have created my new favourite Shepard as by the term "mixed race". Bearing white skin and mostly asian features such as black hair and almond shaped eyes with brown or blue iris. It is quite difficult making a Shepard to look completely asian. I have also imagined my spacer background comprised of one asian parent and one white parent.. Irrelevant to the game but it is quite refreshing for playing as Shepard.

If I was given the option, for these sci-fi setting games, my first and canon character is usually Asian like myself. I create characters from other races afterwards.
I don't think it's that difficult to make Asian looking characters, if anything I would say it's easy since hair and eye color variation are less, but that could be because I'm Asian so I am more familiar how we look.

White, perhaps with a little "something" in him to give him a little bit darker skin. A tan, I guess.

Edit! Amusingly enough, I was in New York City over the holidays and a cabbie who was more of a mutt than me (yet spake many languages--German, French, Spanish, a few others) claimed I looked Puerto Rican and like an NYC native from the Bronx.
