I don't think it's that difficult to make Asian looking characters, if anything I would say it's easy since hair and eye color variation are less, but that could be because I'm Asian so I am more familiar how we look. 

It's more easy to do it in ME1 using one of the stock asian Shepards, but kind of difficult to make an asian shepard I like from scratch without using a asian template to begin with.

No. It mostly has to do with context, but even that isn't always there to be seen. Frankfurter, for instance, could mean a hot dog. But it could also mean, using the exact same set up, a person from Frankfurt. A Berliner is someone from Berlin, but it could also be a German pastry.  Hence the Lecker joke.

I guess if I want to be specific and say shepard is of my own heritage: a hodgepodge of Scots-Irish, Sicilian, English, German, supposedly Native American and some Arabic somewhere in there.

shepps race isn't realy important to me nor the gender ive used all races and gender for the hell of it.
it's great that you can customise shepp anyway you want to i enjoy making a new shepp male and female if iam doing a new playthrough of any race etc if iam experimenting with a different build i mainly use adepts and engineers and sentinels, though i built 2 biotic soldier build sheps , using reave as special power , iwas trying to build a biotic soldier build cause the normal soldier class bored me. excellent posts everyone:)
