I've made several femsheps of various races. The best looking (to me) has a darker complexion with green eyes and the pixie haircut w/ distinctive eyebrows. The smooth skintone (not the freckled one or the old lady skin) crops up in 99% of my femsheps. I always give her fuller lips and try to avoid the duck lip options.

Note: I usually tweak my characters appearance in the editor early in the game. I can't roleplay a fugly Shepard.

My canon femshep is Irish/American, so she's pale, has red hair and green eyes. I always give her the pixie cut.

My canon broshep is Caucasian. Haven't really decided on a background for him. He's basically one of the default faces from ME2 that I played around with for a while, then used the ME1 slider tool to go back through the entire series with him. He's blonde, has a rough face, but still looks like he has some humor in him.

Also, is it just me or do all Male Sheps have big noses?

I made my Shepard mixed. Specifically I had Korean, Russian, and Mexican.

I started with the idea that she'd be from a future version of my city, and developed a little story about her family based on different groups of people who are prevalent where I live. I also wanted to give her a Russian name and justify it with something other than "because it sounds nice."

Wasn't it stated somewhere that ME's humanity was pretty much mixed throughout anyway, and in a very convoluted manner used as justification as to why Anderson does not speak proper cockney-dialect (there's a thought...) or some definitely British accent despite being from London?

Anyhow, if it were left up to me: Pakistani/Indian/Semitic/African. Because dark complexion is sexy.

my first character: Vincent Shepard, I figured him for an irish-american colony kid.
2nd, Victoria Shepard, to me she was a spacer of turkish-british descent.
my 3rd, Iris Shepard, l.a. streetwise, & maybe a bit latin-american.
shep #4 Jessica Shepard, a spacer of native american descent.
5th, Markus Shepard, also a spacer, of german lineage this time.
shep #6, I'm missing one, there's a shep here, can't recall which one.
and finally my final shepard, Katrena Shepard (though it should have been Katrina but for a typo I didn't catch) colony brat descendant of russian colonists.

by descent, or linage... I mean they're all like 10th-14th generation whatever they are, so there's no accent or odd customs etc. just so it doesn't kill my immersion.

Is 6-8 generations long enough to homogenize the human gene-pool?

That's really all the farther that 160 years reaches.  My great-grandparents (3 generations of family) reaches back into the 1890s.

Just think, YOUR great grand-children could be alive when humanity opens the Charon Relay in 2149.

Lol, his model is 100% Dutch, so he totally spray tans in between missions. He's a huge fan of vintage reality shows like Jersey Shore.

It seriously boggles my mind that they made him so dark.

All of my male Shepards are some sort of African American. They got darker as I made more, though that's mostly because they were all somewhat based on my own appearance.

My female Shepards were Caucasian, with one incredibly pale and the next somewhat tan.

I must be biased, because my female Shep is always Arab. I like her to look as much like me as possible (black eyes/black hair, fair skin). I was super excited when they gave the option of purple hair in ME3 because my hair was dyed that colour at the time! 
For male Shepard, I play with a tan/blue eyed/black hair soldier. I didn't have any race in mind, I just tried to make him look hot.

I have no intention whatsoever of having kids. 

My point just was that the question of 'race' - human ethnicity, that is - appears to be rather trivial for humanity in the ME-verse, as stated in one of the novels (Revelation?) that statement originates from.
Further, it's hardly surprising that it ceases being a factor there, given that hyoomies are not the only sapient species around in ME.
