Here's a list of all available spell lines, including which lines come with skills preassigned on either Wynne or Morrigan. When planning out your own mage character, you would probably want to choose to focus on lines which don't overlap with your preferred NPC mage(s).
For a three-mage party, the obvious void is in Spirit- you need anti-magic to protect your tank from all the friendly fire, plus the Walking Bomb line is just comedy. Glyphs, Conjures, and Fire (better than lightning due to spell combos) are also clear winners.
If you're going without Wynne, you'll definitely want to backfill on her healing abilities; likewise, if you're going without Morrigan, you'll probably want her hexes. If you're playing as the only mage in your party... fill in whatever you want!

Where do you find Wynne?

There are other threads about that.

I plan to play a mage myself (bloodmage / lich, have build posted in Mages board), with Morrigan as a bastardized healer.
I planned to forcefield the tank when laying down the hurt rather than use spirit.
I went fire/lightning since I don't know about Walking Bomb being affected by spellpower as much as the elements, and I didn't want icecubes/statues since I "eat" corpses to fuel my spells.
I will fill the vulnerability / affliction hexes, since they double the effect of my lifetaps.
