I pretty much drag Nate and Sigrun everywhere, since they're my favorites forever. Probably in the whole Dragon Age series. Almost all of my characters love, respect, or want to keep an eye on them, so they ALWAYS come. And I never regret it.
Wynne and Shale usually escape the camp more reliably than anyone else in DA:O. What can I say? I like their awesome old-ladytude.
Aveline, Varric, and Sebastian probably get the most bracing walks in DA2. Seb pretty much comes in to replace the sibling, and everyone else gets to fight for the spot. I make Seb and Varric sit a few out, but it's a rare Hawke who's not attached at the hip to Aveline.
My dream team is Sigrun, Nathaniel, Aveline and Wynne.

DAA: Anders, Nathaniel and Velanna. I only played DAA with my dalish dual wielding rogue, but if I ever play it with a mage I'd probably switch Anders for Sigrun.
DA2: Merrill and Isabela always in my party. With my healer mage I usually took Fenris (Carver at first) or Varric along; with my warrior I took Anders.
I would have loved to have Aveline in my party more often, but she was too slow. I need my fights resolved as fast as possible

DA2: Aveline<3, Varric/Isabela, Fenris/Carver. I couldn't stand Merill or Anders long enough to utilize them in battle. :'c

DA2: Bethany through all Act 1 and then switch to Anders. I barely used Merrill. Aveline as the tank, and constantly switching between Varric and Isabela.

Whenever I plck locks there is an item that is completely useless or that is just as good as normal boxes and loot. It is very rare (at least for me) that I get anything good for those boxes. So technically you really don't need a rogue in your party it's just if you really, really want that extrea item to make a little extrea silver (which in DA2 it's easy to get gold from the side quests).

It was a great frustration to me that I wanted to bring Aveline and Isabella along during DA2: MOA for story content but because I was stuck with Tallis, this meant that (as a warrior) my party was not very effective. And I found this especially true on my second playthrough as a mage. And admittedly, once you get past the silliness that no one arrests you for being a mage, I enjoyed DA2 better when I played a mage.

These choices are by personality preferences. As Brodoteau pointed out, sometimes optimizing a party means leaving the people you like home. I have more fun trying to adjust my strategy to make the most of what I have.
To use Brodoteau's example if I'm playing a 2H warrior and want to bring another along I might choose my tactics around the other 2-hander's strengths. If I've got someone who's better at DPS I'll tank, for instance. It works for me. I did do it the other way around, once. My warden was a s&s tank and I respecced Ali to be a dual-wield warrior so my companions could work around me for once. I didn't find it as much fun.

DA2 - Varric, Fenris, and Anders2.0 - I hated him but Merrill couldn't heal. If I wasn't a Mage myself though, I'd take Bethany whenever I could. Even if I was a rogue, I still always brought Varric - he's that awesome, lol. On Nightmare mode as well, I thought Aveline could hold aggro and survive better then Fenris but I played on Hardcore or whatever the difficulty just below nightmare was most of the time.

This is why I play on casual. Well, mostly.The problem I always have is choosing personalities over group effectiveness. I want to hang around with the interesting characters that I like (Morrigan, Leliana, Alistair; Varric, Isabella, Aveline) who have a lot to say (which is why I always took someone like Minsc along as opposed to Valygar). But by doing this, that does not always mean I get the most effective party. This is always frustrating.
In DA:O, as well as Awakening, I had a tendency to switch around, depending on what kind of character I was playing. If I had any go-to characters, they would be Alistair, Morrigan and Leliana for Origins, and Anders, Nataniel and Velanna for Awakening. For DA2, Varric, Isabella and Merrill were pretty much constant, though I switched the sibling in and out of the party a lot in the first act.

I switched both of them up quite a bit though. Those mentioned are just my favorite characters and I usually take that over gameplay effectiveness.

With Inquisition, it's hard to say who I'll go with, but I'm aiming for Beardo the Grey Warden and Varric.
