Dialogue Options- Restricted or always open?

I'm presently replaying ME2 and it got me thinking about the charm/ intimidate options and dialogue in general. Should you be able to choose a full range of dialogue options or should you be restricted later on to be consistent with you character you have created thus far? 

I would advocate the former as it gives you more choice to do exactly what you want to which is kind of the point- further you can effectively create an inconsistent character anyway- my mostly renegade Femshep being a case in point: I'm just making the opposite decisions I made in my first playthrough. As such limiting the charm and intimidate options is annoying however the way they work is more annoying: intimidate and charm have the same results. You should have different response for the tack you take.

On a related matter how much control should you have on your dialogue? Sometimes it is annoying picking a rengade option thinking it'll be jokey and it comes out super serious. I do though like not knowing precisely what will be said. Could you have an extra option which allows you to make light of the situation sometimes playful but some times some serious black humour? I know I'd love to use the latter,
