Yes, I use the search bar like everyone else, but I'm currently running a Vanguard who I plan to equip a Claymore on, and, in the future, a Claymore soldier. What's the best ammo choice?
I'm kinda leaning toward AP since I've seen the video below because he completely just destroys every enemy.

Incendiary Ammo, since it provides some crowd control, unlike AP Ammo.
Specifically, if you spec it to Inferno Ammo, you have a chance to panic any organic enemy next to the enemy you shoot.
Disruptor Ammo is also good for the crowd control since it can overheat weapons and stun synthetic enemies at ranks 3 and 2.
As for that video, if you read the comments, Kronner says that they eventually decided that Incendiary Ammo (Inferno ammo) was better than AP Ammo and Warp Ammo since it provides crowd control.
The damage for AP Ammo, Incendiary Ammo, and Warp Ammo are based off the base weapon damage, so after you upgrade your weapon enough, the damage boost is negligible. Incendiary Ammo, Disruptor Ammo, and even Cryo Ammo are better than AP Ammo and Warp Ammo for shotguns since they provide crowd control, something AP Ammo and Warp Ammo do not.
Sinosleep has a video showing the damage (non-)difference between AP Ammo and Incendiary Ammo.

^This. The damage boost is not nearly as important as immobilization/disabling. Incendiary, cryo, and disruptor ammo all have this feature, so are far superior to ammo types that merely boost damage.
Play style any enemy type will determine which you should equip. I personally favor cryo ammo for a Vanguard shotgun, as it can be evolved for high probability of freezing a target, and a long immobilization (7+ seconds in ME2). But many people favor inferno on the shotgun since it panics multiple enemies (albeit for a shorter time period). Which is better is situational, and probably mostly a matter of personal preference. The squad versions of cryo, incendiary and disruptor (when issued to entire squad) are also great for suppression.
In fact, for classes that lack ammo powers, I'd much rather take a squad mate with squad incendiary or squad disruptor, and use the bonus slot for something else. This approach also has the advantage of allowing you to level up the ammo powers on your squad mate right away at the beginning of the game (Jacob or Zaeed), so you don't have to spend any of Sheps points on it. For Vanguard I usually take 1-point slam initially (until pull is unlocked), and add no points into Sheps ammo powers until charge and passive are fully leveled up.

I prefer Incendiary ammo to AP in general b/c Incendiary can get an AoE effect. Also, both get bonuses vs armor anyway, so there's really not much to lose.
ME2 fights are akin to puzzles. You need to strip enemy protections, then CC them, then finally kill them. You get massive damage bonuses vs. CC'd enemies so raw damage performance actually takes a bit of a backseat to being able to break defenses and CC quickly.

Already been answered, but it is Inferno by a wide margin on the Claymore with Soldier or Vanguard. This is mainly because the Claymore has such a low rate of fire you cannot deal with a group of enemies as effectively otherwise. And this makes charging more forgiving with the Vanguard.
On a Soldier with other weapons you can get away with AP more easily though, since you can choose to engage at mid to long range, with a more sustained volume of fire making CC a bit less important.
