Ok this may be a stupid question (I'm a noob so don't shoot me), am I able to start a new game but keep my old Shepard and change class and everything?? Or do I have to start from scratch?

If you're changing class, how is it your old Shepard anymore?

Depends on what you mean by "keep your old Shepard".

If you already played through ME3, you can start a new game with that Shepard and keep all your weapons, armor, mods, and upgrades (Intel must be found and researched again). However, you cannot change class. You would need to mod your game to change your class.

If you are talking about importing a Shepard from ME2, then yes, you can import your ME2 Shepard and can change your class if that is what you want to do. NOTE: I recommend you load your ME2 save first (in ME2) and reset your talent points at the Research Terminal before importing. This will allow you to assign all your points the way you see fit when you first import it into ME3.

You will keep your credits, level, weapons(and their levels), reputation, renegade/paragon levels, and class.

You cannot change your class anymore once you've started and finished with a certain class. That is permanent. If you want to change class, you must start a new playthrough.

After beating the game, you can import your ME3 save as a new game if I remember right. All decisions imported from ME2 will remain the same (meaning that if you were screwed for Geth/Quarian peace on account of ME2 decisions last time, you'll be screwed this time too - again, only ME2 imports where some very specific things happened allow for it). You'll keep the face from the imported Shepard unless you choose to edit it. I can't remember if you can change class in ME3, but I know you could change class importing an ME1 save into ME2 so I'm not sure why you wouldn't be able to.

A new game plus is using the same Shepard you finished playing. You will not be able to change class or features of Shepard. The only things carry over are credits, upgrades and whatever else you purchased in your previos playthrough.

If you are importing from ME2 you can change your class and looks

Don't do it, it's a trick!

I seriously love Jennifer Hale. I can never get into Mr. Meer's style after playing FemShep for so long. I'm sure I'm missing out on something funny or interesting, but I just can't do it. I can barely get myself to play Renegade.
