Some dialogue from DA2 has me a bit confused about what's up with demons, blood-magic, and Tevinter magisters.

In the quest Enemies Among Us, Tahrone says that the mages/magisters built the 'Imperium with demons as their ... friends (can't remember the exact word she used here, though). Then there's also some banter between Anders and Fenris where Fenris indicates that every magister has blood-magic knowledge and usage, lest they let rival magisters overtake them; Anders points out that you need to learn the art from dealing with demons.

So my question is: how do they deal with demons in Tevinter? The magisters may be in bed with them, but surely they aren't all turning into abominations. And how/why do demons help them if they do not get posession in return?

demon usage is publicly shunned, while privately its fair game. there you go, if a magister is possessed and cant be handled by his retainers, then the templars will annual his general location..

OP, Fenris can say what ever he likes but mages do not need to make deals with demons in Tevinter. The reason is that even Jowan was able to find books about blood magic and that was in Fereldal circle. Now think about Tevinter which has been the center mage society and knowledge for millenias. It would be safe assumption to believe that any mage in Tevinter has access to literature of blood magic very easily without needing to turn to demons.

^^^^

Actually isn't it possible for one mage to learn Blood Magic from a demon and then teach it to an apprentice? I mean lore doesn't say that you need to make a deal with a demon to use it, just that dealing with a demon is the fastest way to learn it, right?

They likely do what Avernus did in Origins and essentially enslave them and bend them to their will. I'm not sure how they enslave demons but its likely by some spell. You also see the Wardens have done it with the defenses in the tower in Legacy.. And its clear the temples of the old god do it and somehow use the demons life force or something to lend power to devices etc. Such as the gryphon statues atop the Legacy tower and the bowl ritual at its base.

They also frequently bind demons to things for defenses, even the Andrastians do this as seen if you defile the sacred ashes.

The magisters appease the demons with offerings of tea and crumpets.

Jowan learned blood magic from a book.

While hitting it off with a preist on the side.  I know that isn't her real role, but close enough.
