I think they can alter their appearance though too. If you get drunk in ME2, Aethyta's appearance will change. Not to mention the guys at the bar who all think Asari look like them (turian, salarian, human, etc).

Wait, what? Does it? I have to check this! I never noticed.
I really like Aethyta, she makes (along with Detective Anaya, Aria and Tela Vasir) the Asari much more interesting.

They're all kind of the masculine side of Asari (as much as Asari can have masculine traits at least)

I'd like to ask who her surgeon was. Especially in the funbag department.
Caould never warm to her, her ME1 charcter I find really off putting. Only once has she made it off Virmire.

Very serious.
Click on her in ME1 when you first meet the council. She makes jokes or expresses frustration about the whole situation. Kaidan plays off of her as the one who's always defending them or being in awe of the Citadel. And she was more Renegade in the first game. Always one of the first to advocate things like killing rachni and destroying the Destiny Ascension over all other characters (even Wrex will adjust to save it if Ash is in the squad). She has none of the sassy attitude in 3, let alone the Renegade tendencies. All she does is act lonely and sensitive in her room and talk about her sister. It's weak as hell, compared to the first game.
As for the xenophobic and religious stuff, I think they had balls to write a character like that. She was challenging.
Sorry, I think you're seeing things that aren't there, probably due to make up. She has next to none in ME1 and in ME3 it's quite obvious she has. Her eyebrows are different yes (bigger, could be make up again), and the angle of her eyes seems different, could be make up, debatable.von uber wrote...
Her ME1 lips and chin are different (much bigger lips, more masucline jawline and her chin sticks out more/is much bigger. So is her eye and eyebrow shape, as well as the prominence of her cheekbones. And that's not even considering her additional chest protection.
I just grabbed that image off t'internet, her colour aint really that different.

Ash never advocated for destroying the Rachni or letting the Council die in my game, she was always the opposite, Garrus and Wrex were always the Renegade advocate in my playthroughs, even Liara advocated for letting the Council die instead of Ash in one playthrough, no one likes them. Her sassiness is still there, usually whenever she's arguing with Shepard. The rest I blame on her change of writer, through it doesn't bother me.
She was never xenophobic, that was Pressley. Ash just reiterated a view held by all world governments, people will look after their own first and foremost before looking after you. This point was proven in ME3 with the Council abandoning earth to try and save their own planets. I wasn't mad though, I saw it coming. There are far more religious squadmates in the trilogy who carry that torch better than Ash did, her beliefs were never as deep as Thanes or even Mordins. There was no need to bring up the same trait in multiple characters.
