
While he isn't written well in the live-action series, he's a great character in the books. Basically the only King who actually cares about the Realm. The true king, in fact, by law. The Targaryens lost their right, Joffers isn't even a Baratheon, Renly isn't even the next in line and tried to usurp the throne, and the Greyjoys, well, they're just raiders.
Stannis Baratheon has had many a badass moment. Enough to make him stand out. Such moments include stuff from the second book all the way to the sixth book previews. Here are some example:

“A sacrifice will prove our faith still burns true, Sire,” Clayton Suggs had told the king. And Godry the Giantslayer said, “The old gods of the north have sent this storm upon us. Only R’hllor can end it. We must give him an unbeliever.”
“Half my army is made up of unbelievers,” Stannis had replied. “I will have no burnings. Pray harder.[/b]”
"'Then rise again, Davos Seaworth, and rise as Lord of the Rainwood, Admiral of the Narrow Sea, and Hand of the King.'
For a moment Davos was too stunned to move. I woke this morning in his dungeon. 'Your Grace, you cannot I am not fit man to be a King's Hand.'
'There is no man fitter.' Stannis sheathed Lightbringer, gave Davos his hand, and pulled him to his feet.
'I am lowborn,' Davos reminded him. 'An up jumped smuggler. your lords will never obey me.'
'Then we will make new lords.'[/b]"
"Ramsay Snow, you mean. The Bastard."
"Never call him that!" Spittle sprayed from Theon's lips. "Ramsay Bolton, not Ramsay Snow, never Snow, never, you have to remember his name, or he will hurt you."
"He is welcome to try. Whatever name he goes by."

"It may be that we shall lose this battle," the king said grimly. "In Braavos you may hear that I am dead. It may even be true. You shall find my sellswords nonetheless."
The knight hesitated. "Your Grace, if you are dead — "
" — you will avenge my death, and seat my daughter on the Iron Throne. Or die in the attempt."
Ser Justin put one hand on his sword hilt. "On my honor as a knight, you have my word."
Stannis bristled at that. "I defeated your uncle Victarion and his Iron Fleet off Fair Isle, the first time your father crowned himself. I held Storm's End against the power of the Reach for a year, and took Dragonstone from the Targaryens. I smashed Mance Rayder at the Wall, though he had twenty times my numbers. Tell me, turncloak, what battles has the Bastard of Bolton ever won that I should fear him?"
"Bolton has blundered," the king declared. "All he had to do was sit inside his castle whilst we starved. Instead he has sent some portion of his strength forth to give us battle. His knights will be horsed, ours must fight afoot. His men will be well nourished, ours go into battle with empty bellies. It makes no matter. Ser Stupid, Lord Too-Fat, the Bastard, let them come. We hold the ground, and that I mean to turn to our advantage."
“Edric—” he started.“—is one boy! He may be the best boy who ever drew breath and it would not matter. My duty is to the realm.” His hand swept across thePainted Table. “How many boys dwell in Westeros? How many girls? How many men, how many women? The darkness will devour them all,she says. The night that never ends. She talks of prophecies . . . a hero reborn in the sea, living dragons hatched from dead stone . . . shespeaks of signs and swears they point to me. I never asked for this, no more than I asked to be king. Yet dare I disregard her?” He groundhis teeth. “We do not choose our destinies. Yet we must . . . we must do our duty, no? Great or small, we must do our duty.
