 For things like powers, does it still add to the challenge if I finish the enemy off with something else? I've been gaining more points than I thought I would, but I'm not entirely sure.

The power (weapon, melee, or anything else in general) does not have to deliver the killing blow to be added to your challenge completion. All damage and damage sources is logged for enemies.
