Something I've wondered, having seen buildings like this elsewhere, but not being familiar with the architectural approach -- what is the purpose of those wooden beams that stick out of the upper parts of the walls?

The beams run right through the building, to hold up the roof or upper floors. They probably help to strengthen the structure as well, like reinforcing bars in concrete.

Why stick out that far, though? Does that increase the structural integrity? Or do they do anything with them on the outside, like hang things on them?

Yep. If they didn't have metal tools to create joints at the ends, some overlap would have been necessary.

Just a note as I am putting these fine additions into the cornucopia.

RWS merchants (the three new buildings are also included :))

A little prezzie from Kamal_ and RWS.
