Anyways, I chose the default male setting, which was soldier.
What I noticed is that I rarely used any of my abulities (probably because I never hot-keyed them) and just gunned down everything in sight.
This time, I plan on taking my time and actually utilize some of the abilities.
So what are the pros and cons and each class?

For build suggestions, see [Mass Effect 1] Start of the Journey: Single Playthrough Builds by Simbacca.
Soldier:
Pros:
- Has the best damage protection ability with Immunity. Can be permanently enabled with the class specialization bonus and at least one good armor mod with cooldown reduction.
- Has access to all weapons
- Can wear Heavy Armor which has the best damage reduction.
- Can have health regeneration by default
- Can reset all powers (including First Aid) with Adrenaline Burst.
- Immunity and Adrenaline Burst are combat powers and are unaffected by Damping.
- Practically unkillable late game.
- No native crowd-control abilities without a bonus power.
- Requires taking a tech squadmate to to unlock objects.
- Must spend 7 points into Assault Rifle talent to unlock the Sniper Rifle talent tree. Overkill is the worst weapon skill; you will rarely use it.
- Master Marksman (pistols) can out DPS (damage-per-second) Assault Rifle
- Assault Rifles and sniper rifles have no accuracy until level IV.
Pros:
- Has all the biotic abilities. Lift, Throw, Singularity, and Stasis are the best crowd-control abilities. Master Lift can lift all enemies except Thresher Maws.
- Barrier is the second-best damage protection skill.
- Bastion specialization allows you to damage enemies in Stasis and will replenish shields while Barrier is active.
- Requires taking a tech squadmate to to unlock objects.
- The radius of Throw and Lift can bug out, meaning you will lift only one enemy at a time.
- Only one weapon (Pistols) by default. this can be a problem if enemies Sabotage you.
- All native powers are affected by Damping.
- Some attacks (like Rockets, acid spit) will ignore shields, even if Barrier is active.
Pros:
- Can unlock all objects by yourself (Electronics and Decryption skills) without requiring a tech squadmate.
- All native powers are affected by Damping.
- Only one weapon (Pistols) by default. this can be a problem if enemies Sabotage you.
- Tech powers are very situational. Sabotage can be detrimental if you sabotage a Krogan or Destroyer, since they can rush you and beat you to death.
- AI Hacking will not affect all synthetic enemies, and you will not know which ones are not affected until you try to hack and the hack fails. Hacked synthetic enemies will go beserk, but will attack you instead of their allies if you are too close.
- No good damage-protection ability.
Pros:
- Has the best crowd-dontrol ability with Lift. Master Lift can lift all enemies except Thresher Maws.
- Barrier is the second-best damage protection skill.
- Can reset all powers (including First Aid) with Adrenaline Burst.
- If you have unlocked Singularity as a bonus power (by using it 75 times with the Adept), you can put it on the Vanguard and become a better Adept than the Adept (minus Stasis).
- Can access Medium Armor for better damage protection.
- Shock Trooper specialization decreases cooldown on Adrenaline Burst, and will replenish shields while Barrier is active
- Point-starved as it has too many good abilities you do not really want to ignore.
- Some attacks (like Rockets, acid spit) will ignore shields, even if Barrier is active.
Pros:
- Can unlock all objects by yourself (Electronics and Decryption skills) without requiring a tech squadmate.
- Has the best damage protection ability with Immunity. Can be permanently enabled with the Commando specialization bonus and at least one good armor mod with cooldown reduction.
- Can access Medium Armor for better damage protection.
- Damping only affects Tech Abilities.
- Can acess a second weapon if enemies Sabotage you.
- With shotgun as a bonus power and the Commando Specialization, can become a better Soldier. With the Operative specialization and AI Hacking as a bonus power, can become a better Engineer (requires two Medical Exoskeleton X armor mods to have Immunity permanently active though).
- No truly good native crowd-control abilities.
Pros:
- Can unlock all objects by yourself (Electronics and Decryption skills) without requiring a tech squadmate.
- Has the best crowd-dontrol ability with Lift. Master Lift can lift all enemies except Thresher Maws.
- Barrier is the second-best damage protection skill.
- Can reset all powers (including First Aid) with Adrenaline Burst.
- If you have unlocked Singularity as a bonus power (by using it 75 times with the Adept), you can put it on the Vanguard and become an Adept than can unlock objects.
- If you have unlocked AI Hacking as a bonus power (by using it 75 tiimes with the Engineer), you can put it on the Sentinel and become an Engineer with biotic crowd-control abilities.
- If you take a non-weapon bonus power, can get the "Power Wheel Bug" if you put points into all powers. With the Power Wheel Bug, one of your powers will not be displayed in the power wheel, meaning you put points into a power you cannot use.
- All native powers are affected by Damping.
- Only one weapon (Pistols) by default. this can be a problem if enemies Sabotage you. Can only get Basic Marksman (through the Sentinel passive).
- Point-starved as it has too many good abilities you do not really want to ignore.
- Some attacks (like Rockets, acid spit) will ignore shields, even if Barrier is active.
- No armor talent tree, so no minimal damage protection and no access to Shield Boost.
1) Vanguard (because biotics trump tech).
2) Infiltrator
3 and 4) Adept and Soldier. Take your pick; do you like guns or biotics?
5) Sentinel, because having weak damage protection sucks.
6) Engineer, because ME1 tech powers are too situational.

And since it is only the second run it won't be Insanity, so it makes Engineer slightly easier. You should end up unlocking all the tech powers as bonus powers in an Engineer run for your subsequent characters.
The alternative would be to go Adept w/ AR. This would probably be the easier route since it has a defensive ability, and then you will end up unlocking all the biotics as bonus powers for future characters. I wouldn't be surprised if the most people would recommend Adept as the second character to use.
As far as the hybrid classes, most people like to run them with Tech or Biotic "signature" bonus powers, like Singularity or AI Hacking, which means you would need to do an Adept or Engineer run beforehand to use one of those popular type builds. I have run them all with simple AR training though and it is adequate, if not optimal.

ADEPT, the full range of biotics is amazing, and in me1 the cooldown only affects the one power you used so you are constantly throwing around dark energy. though in me1 you will also inadvertently lift tables, chairs, bodies, boxes etc. and this makes for a really annoying distraction/hindrance in combat.
me2 and me3 is where biotics really come in to their own though. even though you could use your powers consecutively in me1, using the more restricted system in me2/me3 is more fun. you have to work towards getting the right armor (and in me3 the right weapon mods) in order to become the ultimate biotic. the powers evolve in different ways depending on what you choose in advanced skill tree (I know this is in me3, pretty sure its in me2 too) and the effect of biotic attacks is well done graphically
but really, being an adept with full range of biotic powers in me2/me3 is amazing. of course you will need to pick a squad that compliments you, combat is still difficult and you can always change the setting if not. but it will by far be the most fun...at least in my opinion

On ME1, I've pt'd as a Soldier, Engineer, and currently as an Adept. Engineer is fun throughout the series, and Adept is fun as well so far, but I've yet to try it in ME2/3.
If trophies/achievements mean anything to you, then I highly suggest Engineer or Adept, because those are where most of the skills needed to get the achievements are.

Coming just off a soldier playthrough? Try Adept. Like mhmbaSR1 said above having only a single power in cooldown at a time makes it pretty fun.
Though it turns out ridiculously overpowered in the mid to latter stages especially more if you prefer bringing along Liara with you.

Like others have recommended, the Adept/Engineer might be best for a second run since you'll not only get a better feel for the respective strengths of the different biotic and tech abilities, but you'll also likely unlock them as bonus powers for all subsequent playthroughs which will give you an edge if you do decide to ever do a third run for insanity.

I'm not sure why all the hate on engineer. I've started the game with level one engineer and played the entire game on Hardcore, never had a problem. Admitedly, my bonus power was Lift, so that probably helped a lot, but I really found the tech powers to be very useful. AI hacking hacks just about everything, short of collosi and primes(granted, you have to develop if pretty far for that, but by the time you start meeting the tougher enemies, you should be there already), Neural Shock is good crowd control and damage over time that also stops renegeration(I think?). Not as good as what adepts get, but it will work in a pinch. And Damping and Sabotage really help and by later in the game can be spammed pretty much all the time. Overload is certainly very useful.
Kaidan and Wrex were my NPCs of choice, because I needed their ally achievements. Worked out really well.
Yeah, it's not soldier, but it's very effective class nonetheless. And I had fun playing with it. I really recommend giving it a shot.

As cool as the heavy armour for the Soldier class is (and I've played through as a Soldier before), I usually play as an Infiltrator w/ Assault Rifles. I like the tech powers (especially Sabotage and Damping, useful if you ask me^^) and as I recently discovered (I'm late I know, I only stumbled upon Mass Effect a good year ago or so^^) as an Infiltrator in ME2 I can use the tactical cloak, which is a pretty neat thing^^
Basically, as a soldier, its enough to just gun the enemy down. As an Infiltrator, I actually have to plan a little ahead, have to make quick decision where to post my sqadmates, who to take with based on the enemy I'd likely face (though I usually took Garrus and Wrex in ME1), and I overally like the tactical approach I get. Plus, I don't need to take my techies with me when I go ashore, since I can unlock everything I could possibly encounter.
So in the end, I recommend an Infiltrator, if only for the cool tech powers I get in ME2 (tactical cloak, AI hacking, that kind of stuff^^) and because it forces me to think before I engage in combat *gg* Sure, I've died a couple of times so far, I've had my fair share of critical mission failures, but overall it just makes me try harder to find a way through^^
Dunno if I was all coherent and stuff, its still pretty early and I'm only at my first cup of coffee *lol*
Sincerely,
CarrionFowl

If you haven't played an Adept you've never played Mass Effect.

ME2 made me miss the Mako, which I never thought was possible. Frickin' Hammerhead.
