Maybe I'm weird, but I like playing as a male human directly before playing as a female elf. It makes for a nice contrast. The human male is generally accepted, while the female elf is tolerated.

That is the best one for that. You'll have the biggest contrast not only compared to Andrastian society but also the Qunari since every part of that is against the Qun. You are a woman in a man's role, a Vashoth, and an unshackled Saarebas.

Ultimately it comes down to why someone plays fantasy games. Do you want to roleplay or do you want to fantasize? They seem like the same thing, but I don't consider them such. If I'm playing as a character different from myself in any way at all -- either in appearance or personality -- I am roleplaying. If I'm playing as an extension of myself in a fictional setting, I am fantasizing. Although I would love to play as a Qunari first time through, my first playthrough will likely be as a human because that's how I am. The only time I have veered from this pattern was in Skyrim, when I played an Argonian Battlemage first.
Besides, it really just comes down to what people want to be deep down.

People play as what they can relate to. People are human, so they generally want to play as a human. Similar reasons why males usually play male characters and females usually play female characters.
not really true - at least for me (with the exception of games made with romance options - like DA or Mass Effect - but without that, I always play the opposite gender (much easier on the eyes, staring at a female bum through the game (if it is third-person))
same for the races (i normally play anything but human - in TES for example I am always an Altmer and in other games i wished for a race option like say Mass Effect (Asari and Krogan FTW)) - but again DA has a game changer here for me:
i hate playing the "underdog" (elves for example are second (or even third - as there are human second-class citizens, namely all the lowly peasants (farmers, shop-owners, smiths etc. are all second-class to nobles, chantry-folk and hell, even mages (they maybe locked up - something I am against - but they leed cozy lives, compared to farmers etc.)) class citizens and i don't like to deal with prejudices!) - i like being the "knight in shiny armor" (or rather: the mage in glowy robes ^^ as i don't much play melee-classes or archers (at least if there are magical classes available))
so yeah, my first character will probably be a male human mage (after that: female, human and mage...i just like the class, with the exception of playing my PC as a healer...i am a DPS/CC kind of player, healing can be done by my second mage character (one of the companions) unless, of course i am cheating (because a mage that can't heal is kind of stupid - while not every mage might be able to cure illnesses etc., battlefield-healing should be a skill they all have (!))

ps: after both human play throughs i will probably go with a male elven rogue (and then i will probably role a female dwarf warrior...and after that well, i will probably play all possible combinations (always have in DA...well: except for DA2, mage was the only really interesting path, except i would have wanted to keep Bethany instead of Carver (and not because I was imagining the siblings having a relationship other then the sibling one), because the later was quite a DICK!)

This is an interesting question, and one I've mulled over myself more than once
In playing Dragon Age I guess I've come to feel personally that I connect the most with elven PCs in this series, in particular city elves. To that end I too, as the OP touches on and as many have mentioned here, look to play a character that best represents me...in my case I guess on an emotional level rather having a character that is able to look like me.
It's one of the reasons I like the return of playable races so much. Everyone can create a character that really speaks to them, and then try out others as well and get to know them ![]()

Yet it seems the majority of players defer to their own race and choose humans in these fantasy worlds. I don't have direct evidence, but I read somewhere that the ratio of people who played humans in comparsion to elves or dwarves in DA:O was 80:20. That blew my mind honestly, considering my different idealogy of this topic.
If I remember correctly, Bioware actually chalked up that statistic more to "people just chose the default" more than "people chose human."
Don't underestimate the amount of people that play the game that could care less about character customization and just want to jump right in,

I mean in DA:O I played so many games, but the huge appeal for the human was it was the happy ending. especially if you romanced Alistair. Becoming King/Queen is cool and the only race that has another ending open to them depending on race, and some may argue the best ending. Right out of character creation, especially new at a game, you dont really know what being an elf or a dwarf will entail, so picking human you probably have some standing. There are a few people who think Dwarves are short and elves are too willowy, also the idea of race class and what you think might fit.
Lots of reasons. I like dwarves but I can see the reason why someone would play human.

Humans of fantasy are usually not "Human" like you and I, and that includes Dragon Age. They may share the name, but they are no different than the Humanoid aliens of Sci-Fi, like Doctor Who.
Take Warcraft for instance. In that fiction, Humans are the creation of god-like beings named Titans, they were beings made of stone, cursed by a Lovecraft esque pantheon of gods, and then went under a series of modifications before finally emerging as a new, flesh and bone species. Like that, Humans of Thedas are likely a creation, or for hardcore magic realism, their process of evolution was almost identical to that of Earth.
However, Humans of Earth are primates, the result of an evolutionary pattern that took place solely on Earth. They are not a creation, and they have no relation or kinship to Warcraft Humans, Thedosian Humans, Westeros Humans or Lord of the Rings Humans. Some of these species' real names are not even "Human", as you know, they are named as such for the sake of fiction and the ease of the reader; and those actually call themselves "Human" share the name of the species with their Earth counterpart in addition to the looks, and to some extent, culture. Again though, fantasy Humanity simply have no shared ancestry with the actual species that they are inspired from.
So go Qunari. They have horns.

Well, if given the option I'm much more excited to play a non-human character, myself. But I'm still playing as a human at least once per game because I want to see the difference. (Watching YouTube videos just isn't the same)

In the case of being the inquisitor it would make perfect sense to me to be human. Any other race would be strange to have the opportunity to be inquisitor as their culture is not based on the principles laid down by the Chantry and the teachings of Andraste. That's my main reason really to be a human protagonist.
I'll obviously experiment with other races at a later stage.

I'm guessing BioWare will open the game with something that doesn't necessarily scream: 'Pick the human! The human! It's the only logical choice!'
Your bringing up of Andraste and the Chantry raises a fair point, though. But I feel this won't be much of a problem in the game, since the Inquisition will be established as a means to dispose of the hordes pouring through the Veil. And, as any Revered Mother I feel'd say:
"Race is unimportant in the eyes of the Maker, for all who are willing to save His children are blessed in His name." Or something like that. Could be about 'ham' as well, depending on who you ask.

I like playing a "good example" of my race in fantasy or sci-fi games, particularly because humans are often classified as the bully race. I hate that trope with a passion.
