Well, greek and shinto are done. I'll put some money on South Asian religions, probably Hindu. Then again, those personas were heavily represented in P4, and I don't know if they would want to re-use chars.

No, because I think the games shy away from the characters actively talking about their personas unless it is a direct plot point.
That said, they completely recognize the mythos in P4 around the prime antagonist and Marie (I think). Aside from that... I don't know how conscious of their Persona's identities they are.

I just remembered this bit about Persona 1.

There were also Roman, Persian and Egyptian personas (some that were based on actual people) in Persona 3, I believe.I don't think it matters as long as it fits with the characters and their themes. I know Naoto does in the true ending P4. Yu also quotes a very famous line from Izanagi in myth when he uses his instant kill in Arena.
"Thousands die, million are born" This is what Izanagi said to Izanami after the events in Yoma when she said she would kill thousands of his propel each day.
Really I rather Atlus look at different mythologies. Greek and shinto dominate the persona series(while there was some non-greek myth ones in Persona 3, it was pretty low and Persona 4 was pure shinto)

That's true... There aren't a lot of Egyptian gods in P4. Actually Anubis is the only one I can think of.
Acknowledging their appearance is superficial -- Izanami, Nyx, Kagatsuchi none of them acknowledges the meaning behind their names- It's becuase they are not really gods. Gods are but a concept created by humanity to give meaning to their own lives, that's how some people truly perceive religion as well. They are mere constructs of fabrications and tales, just like any folklore legend. In Jung's studies, he'd notice recurring patterns of tales that would regale on people dreaming about monsters, taking shape of myths, legends and other characters from ancient folk lore. There are no gods in Persona, only Shadows that are formed, shaped and born from humanit.
