So it seems like they are going for a lot more environmental triggers. This video is in engine and there is one scene where that troll thing stepped on the floor and the animals around it fled. I haven't seen that implemented in a dragon age engine before.
There was also a scene from a demo which required the ship to burn and I don't have the citation with me but one was able to burn it with spells in stead of it just being exclusive to some sort of torch.
However, I will take a stab in the dark and say It looks like the emergent system was emulated from Skyrim's dynamic quest system but instead of having quests we have events.

The emergent system could add context to random encounters. I am sceptical but would love to see how it is implemented.
Giants? I think they mean that huge tusked thing, which I'm convinced is a troll. Gaider confirmed they existed in Thedas, I think.
