I've never played any of the trilogy on insanity. I did Tali's recruit mission in ME2 on hardcore once, to get the geth pulse rifle.
How much tougher is the insanity level game compared to the normal difficulty? I've read the descriptions on the options screen, but they're not very specific.

Depends on the game.
For ME1 Insanity basically buffs all the enemies. The most important and annoying part, like really annoying, is that Organic enemies gain the Immunity ability and the capacity to heal themselves meaning they gain like an 80% or 90% resistance to damage making it take much longer to whittle them down. However, ME1 doesn't scale to well so at level 40 when the really good equipment starts appearing Shepard can mow through Insanity pretty easily. The key to ME1 Insanity is to utilize Biotics to turn a room into a turkey shoot and gun down everything as they float hopelessly in the air.
For ME2 the main thing is that every enemy now gains a layer of protection (including husks). This makes everything initially immune to most crowd control abilities. I find ME2 to benefit the most from switching the game to Insanity as it adds a new layer to combat. Also, the duration of abilities is reduced to 80% of the original duration. I also think the AI tends to be more aggressive with enemies charging to your location quicker.
For ME3 the enemies basically gain a massive boost in terms of health and damage, allowing them to shred an exposed Shepard in a matter of seconds. However the damage from power combos gets an even bigger boost. Since Shepard has access to a wider arrange of powers and, most importantly, his squadmates', Shepard can still easily handle the enemies by setting off combos constantly.
ME2 sees the biggest change (because of enemy protection), but I find it to be the most rewarding.
