It would be nice to have the older gent romancable, but simply putting grey in his beard probably excludes him. Not everyone has sophisticated tastes after all.

So In that concept art he';s holding a shield so I assume he';s going to be a tank. Him and Cassandra are both tanks and Cullen would have to also be a tank. 3 tank warriors and Iron bull is the only dps warrior?
