As a gay guy myself, I think Gaider said it to make sure that there would be no ambiguity on the subject whatsoever. I am glad he made it perfectly clear, and I highly doubt he meant it as a slight on bisexuality.
He might not have meant it, but it's hard to separate intent when it's something that gets casually tossed off a lot in an effort to distance monosexuality (good) from bisexuality/pansexuality (????).
Like I said, I don't think he's a biphobic jerk, I just wish he would have chosen another way to put it because it kind of ruined the whole "yay, BW!" buzz I had going.
(For whomever asked- I would have said "Dorian is gay, and while I have written bisexual characters and characters with no defined sexuality who romanced men and women, I have never had the opportunity to write a gay character before." There. The differentiation is made between Dorian's sexuality, Zevran's sexuality, and Fenris' sexuality with no harm done to any of them.)
