I have to admit, this is the first time I've ever been bummed about a romance option announcement before actually playing the game. I was really hoping Dorian would be a female romance option. After reading his blurb, I thought, "here is a guy that will be fun to bring around" and I tend to romance the companions I like to have around. (I'm nothing if not predictable in the romance category). Being a female, I like to play females, so I probably won't get around to seeing his romance arc. That is, unless there is some achievement to be had and then the annoying, rabid achievement nutter in me comes out and everyone gets romanced. Achievement unlocked - and then I feel ashamed of my illogical need for a pretty icon.
I'm still holding out some hope for Varric. Best friends are my favorite romances and he would have to be doing some pretty horrible stuff to get me to not like him anymore. I can't picture that happening. (oh, dang. I really hope that doesn't happen.)
I won't entirely disagree with you, at least insofar as Anders' dialogue with Femhawke being lacking, and Zevran... well, I never liked Zevran at all. However, in Fenris' case, of all the men he knows, one of them is straight and possibly dead, one is pining over a ghost and is also possibly straight, and one is locked into a relationship of mutual loathing with him.
If they could make Fenris form a friendship with Donnic, someone he barely interacted with, they could've easily had him do the same with another Kirkwaller, so I don't really buy your excuse.

I wonder what the other months are. February is Black History Month, and March is Women's History Month, but I don't know the others off the top of my head.

Varric is pretty much all I have left too (although I wouldn't say no to Beardy McWarden, I suppose), but I'm not feeling optimistic about him. On the upside, I like playing dudes (only when it's an OPTION, though, I actively resent when I am FORCED to play a dude), so I will get my mustache love eventually.

May is Asian Pacific American History Month, Sept and part of Oct are Hispanic History Month, and November is "American indian" History Month. Those are the ones I know off the top of my head besides the ones you said. Just in case you really wanted to know
Oh, I think I forgot to say it earlier, so well-wishes to all the gay men who finally got DA representation that wasn't Wade. Dorian definitely appears to be a cool guy.

I'm just going to say this, we have no more control over that then we do over his mage status. Yeah I'm sure plenty of people want him as a LI for their Female character but I'm also sure there's a number of people who want Dwarven mages, that being impossible is part of how they're written. Dorian's not written to meet our every demand, he's written to be a believable character.

I'm not sure how I feel about Beardy McWarden. They introduced him to us and gave us some info but I still feel like I don't really have a pulse on his personality. For me, it is always about the personality. For our sake, I hope Varric is an option.
I don't know why I can't get into playing as a man. I've tried a few times but I never finish. (again, had to have the achievement or I probably wouldn't of at all). When I play as a female, I feel like characters are reacting to me. When I play as a male, I feel like characters are reacting to that guy on the screen. Weird, I know, since I play RPGs. So, I will just have to live through all of you when it comes to romancing Dorian. (insert sigh here).
