since all the companions are supposed to be some of the best of the best, I've all ways viewed them in terms of cohorts or approximate age groupings (exact ages, a mi no me importan):
Importance through experience, a lot of it, maybe too much experience (read: older): Blackwall, Solas, Iron Bull
Well-Established and Respected (read: aged): Leliana, Cullen, Cassandra, Vivienne, Varric
Bright Eyed and Bushy Tailed (read: young): Josephine and Dorian
Prodigy (read: you're too young and make me feel old and unaccomplished): Sera, arguably Cole

Bull would be in second group. His writer said mid to late 30's, I believe, so he's younger than Varric and probably Cassandra.

I'm going by psychological ages, not chronological age. Iron Bull seems like he's got "too much" experience, an arbitrary point where a character seems less long-term oriented and starts becoming a swiss army knife with maybe 3 tools left in it. Black Wall is all about they Grey Wardens, Solas is all about the Fade and eclectic elf stuff, and Bull is all about his mysterious, Qunari past. Usually said characters have to come to terms with "what they've seen," aka their lived baggage, so they can live their last stage of life in relative peace. Another thing is that they have to do that one thing they were meant for, such as training a disciple, so they can quit doing what their doing (Solas, for example).
The next group usually has more long term goals that are less defined. Cassandra is fighting for order, but that order is vague and she's got a whole new stage of life to enter once that order is established, same with Leliana who could end up the next Divine for all we know. Cullen could be the next Knight Commander of some place, where as the "older" group will probably either retire, or enter the next group of people who "are way too experienced to be doing something important and occupy their new profession with intense levels of anxiety at orchestrating it exactly as they want (example: Meredith)." Maybe the Iron Bull will have a second wind we discover in the story, but he seems like the type of "older" character that is intent on burning out, until we deal with his baggage.
Edit: Varric's arc in DA:I might very well be an "aged" character becoming an "older" character who has just seen to much to be who he was in DA2.

Yeah, I think in-game he would've looked kind of creepy with the long hair. Assuming they went with that style.

I agree. I really love his spiked up hair. I hope it's like naturally like that cause it'd be amazing to run one's hands through. If it's a lot of product though, might not be as much fun to do so... ![]()

God, I hope that monkey got cut. I freaking hate monkeys so much, like almost to phobia levels. If I walk into his Skyhold room and that thing is in there, it's probably going to send me straight into Bull's arms.

Ha! That's awesome concept art. A few thoughts:
1.) Good GOD am I glad that Dorian got a haircut. I can't stand long hair and after Anders and Zev, I am ready for an attractive short hair cut. He looks a million times better in his current look.
2.) LOVE the monkey. Yeah, that particular monkey is a little terrifying (and, yes, baboons are frightening in person), but I wouldn't mind if Dorian has a pet monkey in the Skyhold. It seems like something he'd do. Sass-a-licious.
3.) So funny to see the original concept art from the leaked survey. That was our very first glimpse of our guy, back when he was still DHMG. Actually, back then it wasn't even sure if was DHMG. Also, back when people thought for sure that he'd be an arcane warrior or chevalier.
