Well, my CE edition of Mass Effect 2 was gifted to me for the holidays, and the kind Magi that got it for me used GameStop's website to order it. I'm just wondering from people who have ordered from GameStop in the past, how good are they about getting the game to you on the date of release? Will I likely be playing on the 26th, or will I be biting my nails for a few days?

If they ordered overnight shipping it should arrive on the street date release. If not, expect a couple days or so of waiting.

If it was regular shipping then you are looking at UPS ground, which should arrival at your house 2-3days after street date, if your shipping address is a business area or it is close to the driver's regular route, you could get it in 1-2.
If you truly cannot wait, after you get the tracking number you could call UPS and see they allow you to change it to a DC(Distribution center) pick up, if you do that then you can pick it up before they dispatch it, I won't recommend it unless you live close to their DC though.

I ordered mine through the website with their USA Value (free) shipping from which I understand they use USPS to ship it. Luckily I was also told that they have a distribution center in the DFW area and I'm less than an hour away from Dallas. So if mine ships on the 26th then I should get it the next day. Hopefully they will ship it on the 25th though.
