High kicks are overall just a bad idea for anything that isn't choreographed. Any time you let your feet off the ground, you're sacrificing mobility and stability. Can't stand or move around much on just one foot, now can you? And flying kicks are worse, for obvious reasons. Nevermind that any such movement is telegraphed well in advance making it relatively easy to evade, but the inability to cancel your momentum in midjump also means you can only go one way ... and if that doesn't end with the desired effect of planting a limb of yours on an opponents chest or wherever, it's very much likely that said opponent will simply grab you as you flail helplessly through the air and/or haphazardly land and try to regain your stability and defensive posture (which would include turning around if you jumped past the opponent, which again requires a foot to leave the ground and turn your body, all of which aren't very stable movements) and can comparatively effortlessly grapple you to the ground.
And I only had around three years worth of Judo experience and that's a style that isn't big on striking anyway (though a good throw helped by insecure standing is very much capable of seriously messing up someone).

Believe Bruce Lee said something very similar to this when it was mentioned that flying kicks were only for the movies.

Yup.
You say you are unable to kick over your head without a long warm-up, but the real question is, is it really necessary to kick that high? The fact is that, until recently, martial artists rarely kicked above knee height. Head-high kicks are mostly for show. So perfect you kicks at waist level and they will be so formidable you’ll never need to kick higher.
And it's obvious why that is so. For one, the distance between an opponents upper torso or head is the greatest when you want to kick him with your feet. That takes time. Time spend to recognize, react and counter which combined with insecure footing means you're gambling: if you can't connect the strike sufficiently, you're screwed. Compared to that, a strike with your fists/palm is much closer to the target, meaning less reaction time for the opponent and no sacrifice in stability. Plus, if you move correctly and build up force from your feet, let it flow and amplify it through your hip and then put your body weight behind it, you can apply nearly the same power compared to a kick. Though that's mostly a mathematical/physical trivia, since when done correctly, you can easily excert enough force to break your own hand if you don't hit cleanly (or made a stupid mistake like placing your thumb inside when making a fist). That also a reason why striking the head or jaw is generally a baaaaaad idea. The average skull is damn tough and even with jaws, if you don't hit the right angle, you're much, MUCH more likely to hurt yourself significantly more than your opponent.
Truth be told, kicks being more powerful than strikes with your arms is largely a myth (thanks, Hong Kong cinema). Only techniques that utilize centrifugal force are stronger with kicks than with arm strikes since legs have more mass to amplify that particular force. But those are the same kind of techniques that need build-up and are telegraphing so hard you might as well shout the name of your technique and hope yelling like a lunatic startles your opponent into inaction.
