I think "Iron Bull" is more a title. As we get to know him, I think we'll learn his real name.

My theory behind Iron Bull is that was a nickname he was given when he left the Qun, which just stuck. I think we'll find out what his original role was in the Qun, which should tell us his "real name"
As I've stated before, what is in a name? Is it the one we are born with or make for ourselves. Many moons ago, I had a friend who's name (not revealing her full name, of course) was Miranda Leanne. That was the name she was given at birth, but that was never her name to her. At the age of 18 she had it legally changed to the name she'd been going by for years: Randi Lee.
The point is that the name you are born with doesn't always reflect who you are. When folks started calling our Qunari friend "Iron Bull" he probably liked it. As far as I'm concerned, Iron Bull is his real name. All the players will do in that regard is find out his previous title. I think that's going to be a huge reveal though, and one that'll be left for the player that works on his friendship.

For some reason, I am of a mind that he used to hold a pretty high position in the Qunari society. Maybe a contender for Arishok, or perhaps even an actual past Arishok?

I had the same thought. I don't know why, I think something I read gave me that impression. But I can't remember what.

The Qunari seemed to know a lot about Calenhad. I think they have done some experimenting with dragon blood to improve their warriors. The Devs always talk about how Qunari are not the same as Kossith, etc. Maybe Kossith didn't have horns.

I remember hearing something a while back about the Qunari possibly being related to/descended from dragons? Take that with a grain of salt, as I can't even remember where I heard it.
