Im looking at rolling an Adaar and ending up eith Bull on this run.
So my question is: can yourecruit him after youve delt with either the mages or the templars. To me it makes moresense to get a merc group in once you get get to skyhold and realized you need an army to deal with Cory.
Does he have interesting things to say on either the mage or templar quest?
Would it make it harder to get approval if I get him later in the game?

I don't think you can recruit him after the attack at Haven. You're supposed to get all your companions before then.Hi there!

I don't think you can recruit him after the attack at Haven. You're supposed to get all your companions before then.
He does have unique dialogue for both quests.
He's hard to get approval for no matter what, but not impossible. You just have to know what to say and do.
Totally worth it, though. 
Oh you know.. race horses, kill dragons, be sarcastic and make dirty jokes. Just Bull things.

So I just finished the game for the first time and that scene was adorable! Aaaah Bull, ilu. I don't think the other romances will ever be as good as his, it was just... perfect in every way, and it was crazy how well he fitted with my Lavellan's back story (based on some things he said).
Good times! I feel sad now... I have two more playthroughs planned but I have difficulties leaving Bull behind and start over. On the plus side I can get to know him all over again

You can recruit him after the attack on Haven. In my last playthrough I decided to wait till after Haven to recruit everyone, and the recruiting dialogue is actually quite different, with comments on Corypheus and the dragon. It was pretty exciting for me to hear new dialogue. 
I don't think there's that big a difference in how much approval you can get from him. I completed the templar quest and he did comment on it after the fact - I managed to lose some approval by teasing him about demons, which he didn't find nearly as funny as I did. Got him to like me again by judging a few people from my Skyhold throne, though.

Yeah haha, I have these other characters created to try out different romances, but I kinda feel like I'll always gravitate to him. I'm trying out Cullen, Solas and Sera and just not having as much fun with it.

There were a couple, yeah. I had a few debates with him about his feelings on Tal-Vashoth. I remember there was one where you can talk merc stuff with him too.
Besides actual conversations about it, there are usually some dialogue options unique to Qunari characters sprinkled around his exchanges.
