There is a Word of God post much earlier in this thread that says they are brown.

I think stats are now boosted up solely by the armor you are wearing/weapon you are using and increases from certain skills.
hmmm. i was under the impression that stats increase on level up, but they increase uniformly so you can't choose what categories increase each time. armor and weapons add additional stats. maybe i'm wrong? either way is fine with me.

That sounds like hazel eyes to me although they're more commonly green at the outer edge.
