If Sera had anxiety and depression alone to deal with, I'd agree with you. But in her case I suspect a trauma in her past that she has buried so deep that she is not only unwilling but completely unable to talk about it. It's there in her subconscious all the time but her conscious mind just closes its eyes, covers its ears and goes LALALALA really loud. If Cole would do what you suggested and started talking about that thing she has buried...Seras mind would snap completely and she would kill him before he finished his first sentence. You just can't force the issue with a deeply traumatized person. Slowly, gently helping them along as they themselves work to find their way out of the maze the trauma has created is the approach I would choose. Those walls simply won't come down until she feels safe enough with us to let go.
Oh, and I don't think she's ever met a Dalish before quizzy. Fereldan Dalish are reclusive and she's an avowed cityslicker. She just dislikes them based on the stories, also tied in to what I wrote earlier her and elfiness.
