How would you even go about making that into a game? some kind of dance game type mechanic? QTEs? (god forbid)
Depends what you mean by that. Abstracted to normal mechanics level, he picks something up and hits people with it, or blocks/counters people then hits them with it. Animations would be expensive, but you could could probably get away with something greatly subdued because it is dynamic and interactive.
Uncharted 3 had a rather glorious system where Drake* would grab nearby objects (beer bottles, frying pans, fridge doors etc) and use them in place of punches when able. It was more Daniel Craig than Jackie Chan but admirable still.
*That's Nathan "Nathan Fillion pretends to be me, not the other way around" Drake.

Makes you wonder what's in those bottles that can be detected from so far away.
