I'll be interested in how you feel after you do it. I really loved Cassandra's character when I did her romance and you discover what a big romantic softie she is underneath that warrior exterior. Probably is my fave char in the game with Sera and Dorian right behind her.
So apparently I'm rubbish at not only deciding who I like more (particularly cross games) but also at being consistent about whether like is personal or as a character.

A book character. She's awesome, the first female knight (in this universe) and had to pretend she was a boy until she got her shield, and then there was this huge reveal.
But I didn't want to make her as a dwarf! Unintended consequences, lol.

As far as DAI romances go, I'd say Josephine is my canon one since I prefer to play ladies and Sera just doesn't work with my canon Quizzy. Cassandra is such a classy lady though, the way she gently tells us why it can't be. *sigh*
Edit: Also, I am now imagining Sera in a room with Sten and the Arishok...
I'm pretty sure Sten's brand of stoic witty would be a great match for Sera.

I was really surprised that Tressa's whole playthrough, Sera included, ended up being just wonderful for me, and I really thought I had my canon right off the bat, until I got bloody Vivienne as Divine. I wanted Leliana and I'd've been OK with Cass, but Vivienne? *mumblegrumble*
