Well i'd expect higher physical resistance, maybe a bump to strength and durability as well, but that seems rather...predictable.

It's less about incentive and more about punishment. Humans are already going to be the most favored race. They don't need to be the most rewarded on top of it all. It's unfair and dumb.
Humans are the most powerful and numerous race in Thedas. Most of the game will happen at the heart of the most influential human empire in Thedas.
The Human Inquisitor will be a noble and our goal will be to extablish a power base in a time period where nobles hold most of it.
It makes sense for the Human PC to have an easier time.

Easy is fine, being locked out of content due to being nonhuman isn't.

But that example doesn't hinder the main focal point of all video games. The gameplay. the interactivity.

I'm sure they will. Even the Qun had armors that covered more of them if needed. Just look at Tallis.

The main focal point of videogames will vary from person to person. Maybe some will tell you that interactivity requires our character to behave in ways proper to the lore and to have the world react to it in ways that make sense according to the same lore.
Personally, I could never play a Mage Hawke because it felt like he was just some toy I was walking around the world precisely because the rules of the world didn't apply to it. I wasn't interacting with the world, it was bending its rules to make gameplay easier which I didn't appreciate.
That is my opinion. I give the roleplaying aspect of an RPG primacy. For instance, I installed a mod that makes DA2 Grey Warden armors available to DAO and that is what my Warden and Alistair carry around the whole game.
Except in Denerim before the Landsmeet because we are in the heart of Loghain's power and he has declared Grey Wardens traitors to Ferelde so, when I go to Denerim, I put nondescript armor because I'm trying to go unnoticed by the guards.

I have no problem playing as a mage Hawke except for the armor selection in Act 1. By Act 2, it seems to be known-ish that Hawke is a mage and isn't being harassed, for whatever reason (personally, I've headcanoned that Hawke had a forged letter, courtesy of Varric, claiming that she was a Circle mage who'd gotten leave to live there with her family).
Also, I'm fairly sure the Wardens didn't have uniform armor in DAO because they'd just barely returned to Ferelden and didn't have supply lines yet.
