Go to Youtube, search for Gina Carano and then look at one of her matches. You can barely see any muscles on her Arms.
That's because the size of your Muscles don't necessary tell how strong you are. Especially on women who are not drinking any protein shakes.

You don't need necesarry defined muscles. Look at all the other female MMA Fighters/Boxers/insert fighting sport here, look at Top-League Football/Handball/Tennis etc. players. There are very few who look like the ones in your Pictures.

First tell me what ''defined muscle'' even means, because such thing does not exist. You get muscle definition through decreasing your body fat and water, you cannot define or shape your muscles. And in my years of lifting I've seen a very strong correlation between muscle mass and strength, the bigger my muscles got the more weight I could lift. And I've always been stronger than those who had a similar exercise regime but less muscle mass.
Look at people who do circuit training, it contains an enormous variety of mixed exercises, and most experienced athletes that do it are very muscular.

I feel rather silly having made the assumption due to the 'movie', 'DA:Heros' and some concept art, that she was a two-handed Sword type of warrior. when in DA2 she didn't have any weapons on her, (bar book stabby knife).

No reason beyond that that's what the Devs decided. Iron Bull is definitely the two handed warrior, and we'll have Cass and Blackwall using sword and shield (I'm not sure about Blackwall, would need to check).
