Indoctrinate? lol what game are you talking about? It's just a religion. If you're already a Chantry believer, then that's all there is to it, dogma wise. As for joining a military order, that has nothing to do with indoctrination. Just discipline and commitment.
You don't have to be chaste all of your life either. They're not nuns and monks. Think Aveline and Wesley, for example. Or the dozens of Templars who visit whorehouses.

I don't know, I could find a way to justify it. I mean, look at Sebastian in DAII. He was with the Kirkwall Chantry for 7 years having forsworn his initial vows.

Sebastian was committed as a brother of the chantry.. totally different. He is in fact meant to be chaste and monk-ish. Templar isn't exactly a religious vocation. Or at best, it's like a civil and military element of the religion, mostly concerned with the Circles. You get paid, you can get married (Wesley), have kids (Thrask), you can sit around in bars getting drunk, you can visit prostitutes, etc..

Doesn't say anything about being a member of the Chantry, as a brother or a Templar, just that the family has close ties to the Order. Wouldn't be the first noble family that preached about the importance of the Order but didn't want to send their own children into it.
Thats certainly how I'm playing my Inquisitor.

I'm just playing my guy as a somewhat well meaning, but black sheep of the family. Disciplined at combat, but never commited to higher demands.. at least until recently. From what I can tell, you're sent with your family to the conference. Not only with the chantry per se.

You're reading too much into it. It's just saying what culture you come from. It's just a background. It isn't some sandbox where you invent a character from scratch, and wash up ashore as some mysterious adventurer somewhere. It's just there to give a basic template for the environment and religious world you grew up in (as opposed to say, Dalish or Qunari).
Also, Indoctrination has a more insidious tone, like being strapped to a chair and made to watch flashing screens of propaganda.

No arguments from me on that, but the back story says you were raised as a devout Andrastian. 30 may be too old for "indoctrination" to begin, (not that I agree with that statement) but thats completely irrelevant to the age of the Inquisitor.
My HI is going to be 40 because I think Cass would want an equal rather than a kid. As someone who has been with Cougars in my youth I'm aware that these relationships are pretty hot but usually little more than infatuation.

But they are expected to be forced to anyway, probably because then if they don't they'll get cut out of the will. 30 is also pretty old to start a career in the clergy fi that's something your family forces on you.
The origin states you are rasied as a devout Andrastian in a family with ties to the Templar Order. It does not say anywhere that you are "forced" into a career in the the Chantry, either as a Brother, initiate or Templar. All it says is that you are sent to the Conclave - the event in Haven that starts the story - to aid your family. We don't know in what capacity your family is involved in the Conclave or your role in it.
I'm not sure where this idea you are being forced into the Chantry comes from? Are you referring to something not in the Wiki?
