Between mages and dwarves, which has Cassandra historically had more problems with? Mages. In fact, there's no evidence to suggest that she has a problem with dwarves (except Varric, who regardless of his dwarf-ness was just a plain nuisance toward Cassandra).
I don't think race-gating Cassandra makes any sense (nor does class-gating, but it would have made more sense based on her past views). Fortunately however, Cassandra's character arc involves becoming more open-minded (particularly toward mages).
On a personal note, I'm really glad that my elven and qunari mage Inquisitors (and my dwarven rogue Inquisitor) can romance Cassandra.

It has nothing to do with the fact that dwarves are dwarves. It's the fact that they look weird. Cassandra obviously doesn't have a problem with that, but physical attraction kind of matters a lot.

I said Cassandra doesn't have a problem with how dwarves look and that she find them attractive. It was a response to you bringing up class for some reason as the background mattering, when sexual attraction usually stems from visual appearance as well.

Why would Cassandra single out dwarves as being visually unappealing, though?
Of the non-human races, they are the most similar to humans.
On the other hand, elves and qunari are far more....exotic than them. They both have pointed ears. Elves are skinny and lack facial hair. Qunari have horns and metal-hued skins.
If Cassandra were hypothetically shallow about her significant other's physical appearance, why would she romance an elf or a qunari?
