Liara= comes off as a little too easy (not trying to troll as I usually choose her anyway) and we all know how things go in the second one which actually does slightly affect my opinion of her.
Ashley= Far too fanatical/xenophobic for my tastes. Sure, she's cute and somehow I always actually picture her being the kickass version of Mila Kunis, but the way she acts in the first and second game makes me at times want to punch her in the face (and I'd never hit a girl... except the reporter
Tali= More moderate, and actually reveals a lot about herself before showing any real interest (it actually feels like she is getting to know you like you are her). In the second one I felt a little like she was perhaps too easily interested, but given what we'd been through already and the fact she played a friend before girlfriend role already I was satisfied enough with her progression.
The whole mask thing means very little, sure its a bit of mystery but I couldnt really care less about that, its more about her as a whole, and the fact your other choices are much more "polarized" love interests.

LOL, as much as I like her vs the other LI's if she truly looked as horrid as a Vorcha, I might have my opinion slightly altered or at least tell her to keep the mask on more often

A previous posted offered a pretty good list of her qualities, so I won't repeat those here; I will point out, however, that she is one of the very few people from the first game who seem genuinely happy to see you in the sequel and aside from Joker, Chakwas and Anderson, is the only one of your old friends to really support you from the get-go.
Like Liara in the LofSB DLC, your relationship with Tali seems more developed because of your history together as well.
Superficially, the accent and the encounter suit do make her more attractive. Personally I have come to identify Tali with that suit so much I don't want to see what she looks like under it - it just wouldn't seem like the real her.

I have said it before, and will say it again... Tali is the most popular character because Bioware wrote her to be that way (call it fanservice that they did not make her a hard to like character like say Miranda or Jack).
1. She was written to be likeable: so she damn well better be popular!!! She is friendly, polite, loyal, sweet, etc. Most normal people want those traits in a partner (and most people seem judge LI's like they judge an actual potential date/partner). Contrast with Jack/Miranda who tell you off multiple times, are very cold/arrogant early on, and who have a sketchy past. They are written to be hard to like at first (especially Jack).
2. Tali is Easy: She also throws herself at you romantically. Who doesn't want that in a woman that is crazy about you? Add to that her virgin status... and you pretty much have a hot little number that the traditional "virginal love" types will like due to her purity, in addition to the "I want to pop her cherry and show her the ropes" dirty types. Contrast that with Jack who tells you to "go F*$K yourself". With most people... the sweet virgin throwing herself at you wins over the b!t@h who has been around and who tells you off.
3. The Mask: I don't find Jack attractive because she is bald. Some people don't like aspects of Miranda's face. Tali looks like you imagine her to look. It is like a good book vs the movie: the book is always better because everything is "as you imagined it to be". i.e. the way you want it. Your ideal. Everyone has a different ideal. With Miranda/Tali - what you see is what you get (like it or not)... with Tali... you get whatever you dream of.
4. ME1: Tali was boring as drying paint in ME1... but people still had an interest in her, and the added history/nostalgia from ME1 will make her (and Garrus) more appealing. They have two games to get to know... the LI's from ME2 can't compete.
5. Liara: her initial absence in ME2 resulted in a lot of Liara fans jumping ship to Tali. Both appealed to similar demographics (nice, sweet, polite, loyal, virginal, friendly, etc). The return of Liara throws a wrench in things to "split the vote", but I think the damage is done.

To answer your question: If we saw her face her popularity would be effected. Gone would be personal ideals... and people's differing opinions would take hold. Think Miranda.
The only exception would be if she was designed to look "universally pretty", yet that is pretty much impossible.
