I've given this way too much thought, but here goes...
My Inquisitor would be Beef bourguignon (bœuf bourguignon).
It's a French (Orlesian) dish, but has a rustic and down-to-earth character with its roots in peasant cooking. Over the centuries it has been slowly refined into haute cuisine, similar to how I envision my Inquisitor as a noble who has not become decadent or pompous because of his heritage. It is a hearty and manly meal with tough braised beef, garlic, onions, broth, mushrooms and bacon, but it also has a sophisticated and sensual undertone with the red Burgundy wine.
Just like my Inquisitor, it is a multi-layered meal, with a deceptively rugged look, but a smell and taste that can hold its own against even the most extravagant dishes. Humble, yet extraordinarily tasty, it will fill your belly, warm your soul and sustain you for a good while after you've finished eating. It's a meal for a noble warrior, an sophisticated gentleman and a true leader.

Ahaha you know that Beef Bourguignon is Varric's defining dish, right? Your Inquisitor must be similar to him!

Cheese String. If you're not careful you'll have strands stuck to your fingers, and you'll be shaking them around like you have a Tarantula on your sleeve.

Cherry on top. Takes things to the next level. Sweet, tart, but disgusting if not fresh.

What food would a Chaotic Neutral dwarven rogue, who hates Varric, be?

A huge Nordic feast. With black jack and hookers as entertainment. A truly spectacle evening. Then a trip to the local Anders for medical attention the next morning.
