Three endings would be great.
yes, the mages survived with our love one, destroying the templars who opposed them and destroy the evil thing
yes, the templars survived with our love one, destroying the blood mages who opposed them and destroy the evil thing
and third which would be my favorite, we found a group from both mage and templar fractions who worked together to destroy the evil thing and we survived with our LI.
An optional sacrifice one is ok as long as there is a survived with LI ending to balance it. I did do the sacrifice in DA:O but not often.
I'm not interested in my character ending the game pregnant or married, though having the conversation would be nice, - where do you see us if we survive? Together on that farm with 12 kids running around? Sounds great, lets kill that whatever it is and get started. Or I see us rebuilding or traveling or just growing old together, or I'm sorry, it's been fun but I don't see us in a long term relationship. As long as it's not forced I don't really care.
I'm sure one or two will be too busy for a LI and most of my characters don't believe in a ritual for their lifetime partnership while none would want kids. But a few would probably enjoy talking about their future together. Playing DA:O again and I had forgotten how sweet it was when Alistair and my warden talk about the future. But I don't need the actual wedding or seeing my character 7 months pregnant.
More than that is extra icing on the cake and I do love icing. I don't expect 40 completely different endings, but a range of endings would be interesting. Let my endings reflect what choices I've made so I can play again and make different choices. I did enjoy ME2 a lot because I could get a different death toll, including the everyone survived option which I did probably twice in all the time I played.
