You're right; I love how Shep started to break down in ME3; this was even more poignant when I played the previous two games and realized there was such a difference in how confident he (mine's a dude lol) was when compared to the latter half of ME3. I mean even in ME3 I could see him getting frustrated with the leadership and just displaying less confidence and bravado. Of course Shep's responses were also scripted, so if you WANTED to play a calm and cool Shep you really couldn't; s/he was written like that no matter what. So I think/hope you're right about the emotion wheel; that does sound pretty cool!
I've always felt that the DA team do the humanising of the characters better than ME did, but then the characters in ME were soldiers so they're kinda trained to show a lot less emotion than someone like Hawke would who was just some shmuck thrown into all these chaotic events, lol.
