Well technically, NPC stands for "non-playable/player characters" or a character that cannot be controlled, which companions are playable/controllable by the player. So NPC is a correct term to use in this case

Typically yes, but if you switch control to one of your companions, that companion becomes the player character and the protagonist can be considered as a NPC since it is controlled by the AI in that moment. It's a bit screwy with Dragon Age since you can jump around from character to character.

How I think of it is the protagonist is the PC, companions are just companions, and anyone I'm not able to directly control is a NPC.
I plan to romance Cullen first no matter what. In theory, perhaps it would be better to romance him first if he's an NPC simply because we have no idea what to expect from the companion romances the first time around so we can't compare and complain that it's lacking, which could potentially ruin his romance completely if doing it the second time around.

That's a really good point... this is going to sound odd but the first playthrough is special so it's important to me to pick a good LI to share that with. Subsequent playthroughs are still exciting, but you'll never get to go through it for the first time again. I swear I'm still talking about the game
I'll most likely romance a man since my first PT is usually based off me, but it'll be REALLY hard to decide if they include Solas or DHMG as the other LI :/ Grrr, but Cass is awesome too. DAMN IT BIOWARE, why do all your characters have to be so cool?
