Welcome and happy delurking TeganJ. I think a mage romancing Cullen playthrough sounds like an interesting game! Although I may also think a Cullen romance is the best way to go for any character class.

Human mages with Cullen seems to be popular choice
I wanted qunari but sadly it didn't work out, now I'm going with human mage as well
My own mage will be pro-circle Knight-Enchanter, she wants just circles and templar order to be reformed so there is no longer abuse.
I'm thinking I'll be going KE as well. I don't think I've seen anything that says we'll be able to indicate our inquisitor's age (other than how we roleplay them), but I picture mine as more my age (which isn't quite up there with Rhys but is fairly close) rather than a young un like the Warden and Hawke (at the beginning of DAII) were. So I see her has have been content with the order of things in the circle for awhile, then feeling the restrictions increase over time and only once things exploded and she had to fight for her life has she seen that the old system needed to be done with (not that she knows yet what should replace it, but now she'll be committed to not going back to the way things were once the whole breach/Elder One thing is resolved.

This is the conundrum I'm having with deciding on which inquisitor I'll create for Dorian. I want to go warrior (not very good at the whole rogue/stealth thing myself) but I can't decide between human or elven. I'll see how my first playthrough goes before deciding, I think.
