Hello. My name is Duckley and I am a Cullen addict.
I need to be able to play a whole game of non Cullen romance. I want to romance Cassandra and then Solas. But everytime I start a non Cullen game, shortly after I reach Skyhold, I start missing that wonderful Cullen magic, create a new character, and abandon my game!

Hmm I'm really sorry to say that Cullen addiction is a serious, non-curable condition. However your prognosis will not be bad, since Cullen enhance living instead of deadening it. He inspires.
Still if you insist I can recommend several symptomatic treatment:
- write fanfiction about Cullen
- draw fanart about Cullen
- make Cullen GIF
- play two playthroughs on parallel
- replay Cullen scenes everytime you are on Cullen withdrawal
- Cullen body pillow

I do like a man in armour...
But I like a man out of armour better
In a more serious vein my Inquisitors are probably pretty happy he's out of all that plate. The sweat, the rust, the two-person assembly job and the padding... Not to mention the feeling of hugging a kettle.
The best course is getting this man in armour out of his armour. The process alone is worth the while.
Especially if it's Cullen.
Everyday is Cullen's body appreciation day.
How about recording the romance scenes with Cullen and your character, watching them until you're sick of it and then creating a new character?

Although, his DA:I outfit seems a heck of a lot easier/faster to remove. And this is a serious, procedural issue!
I don't think there's honestly any way Cullen could have removed his own armor in DA2, given the placement of the buckles in the middle of his back. But I still like the look of the armor better.

I admit I haven't studied the DA2 armor closely, but buckles can also be there for adjusting size and wouldn't necessarily have to be unbuckled to remove. I like the DA2 armor better myself even without studying it closely because the DAI armor hits the armor geek in me that says "how the h**l does that work, and why would you do it that way on purpose?" ![]()

Good point. Probably like in that wet suit people wear for surfing/wind surfing? I know that in mine there's a velcro/zipper at the back, around same position with Cullen's buckle, with a kind of system that I can open it by myself (a kind of small string that can be pulled). Probably they have the same?

After quitting the Templar to follow Cassandra's founding of the Inquisition, Cullen happened to be in Val Royaux with both Josie and Leliana. These two ladies insisted that he came with them for a shopping trip...Josie wanted something flashy and classy and cute and frilly, while Leliana chose the armour...
...et voilà!

Most folks that have deconstructed have come to this conclusion, but who knows based on what we can't see. (here's the only deconstruction I could easily find from the past; sadly the original is gone) That being said... at least it's more practical than the DA:O armor, which I think was actually unphysical in some ways if a templar actually wanted to move. ![]()
On his DA:I armor... man, Cullen's character kit was such lost opportunity IMO, because it could have explained exactly what the yellow ribbon thingie is and how his shawl, vest, I-don't-think-it's-a-repurposed-templar-skirt thing actually works.

Not really, unless you romance him specifically as a Templar warrior (you get unique dialogue options with him that way). Otherwise, as a Champion or Reaver, the romance is the same as with a rogue.
Of course, there's the element of roleplay. You might roleplay very different dynamics between Cullen with a Inquisitor who is trained in sword work like him - they could train together, teach other techniques, critique each other's foot work etc; and Cullen with a rogue Inquisitor, for instance, who uses weaponry he doesn't know the first thing about - it might entertain him to watch her fletch her arrows, she might teach him better aiming practices for his throwing knives, etc.
But in practical gameplay terms (scenes, dialogues etc), no, you don't get anything particularly different.
