I wouldn't expect much of an answer. Neither of the games they are working on, Mass Effect: Andromeda and the secret IP, are in a state where they will be revealing voice actors/actresses yet. So even if she was, she can't answer on those since she signed a non-disclosure agreement.
Josephine isn't the first Bioware character to get an ambiguous romance arc either. The first was Kelly Chambers in Mass Effect 2. Way back when there was a discussion about Kelly Chambers' dinner with Shepard in his/her cabin, and whether or not something more than just dinner was implied. Her writer (Dusty Everman) weighed in and basically said that both sides were right in how they interpreted it, that it was written to be intentionally ambiguous, and that whatever the player thought happened, happened.
I'm not a fan of it being left ambiguous personally, but I also don't see it as something that ruins a character's romance arc.

Do you think Josephine likes animals? She's best friends with Leliana who adores them, but I can't help but think Josie is not fond of furry, scaly or feathery critters. I'm not sure what gives me that idea. What do you think? And if she is fond of animals, what kind of pet do you think she would have?

IIRC, swans are complete jerks (though I suppose exceptions are possible). However, I can see Josephine having a cat. Definitely more of a cat person than a dog person, I suspect.

Well, in the interview Allegra says Josephine enjoys adorable things, so if the animal was adorable then I see no reason why she wouldn't like them.

With respect, I think that your opinion may be skewed by your demisexuality. Said fantasies are extremely common among the human population, to the point that the term "creep" would lose any real meaning if applied so widely.
