I'm a voice actor nerd so honestly if I listed off all the voice actors I liked, we'd be here all day. I'm trying to think of one nobody's mentioned yet...hmmmm. How about Dave Fennoy? I've loved his work in the recent Telltale games (notably Lee in The Walking Dead, also Blackbeard in The Wolf Among Us), and looking up his work he's actually in Mass Effect 2 as Warlord Okeer (the scentist that created Grunt) and Jacob's dad, so he's already worked once with Bioware! It'd be great to hear his work with them again.
I also really love Jennifer Hale--she was Ivy in Where on Earth is Carmen Sandiego? which was one of my favorite shows as a kid (and I think maybe her first voice acting role?), and I've been following her work for as long as I've been interested in voice actors. That being said, since she was already the female PC in a big trilogy with Bioware I don't know if I'd want to see her as one of the PC voices or a companion this time. Maybe an important NPC? (Although even if she got a bigger role I certainly wouldn't complain!)
I'm pleased to see Wendy Powell mentioned here, too, since I think she's fantastic! I think she mostly lives and works in Texas, though (like most actors that work with Funimation) so I don't know how likely it is that she'd be in a Bioware game. She'd probably have to commute. Of course if we're just talking dream casting I can think of a lot of actors that have worked with the anime dubbing scene in that area in the past that I'd love to hear in video games, like Monica Rial, Chris Patton, Brina Palencia (who actually HAS been in a video game before--she's Mad Moxxi in the Borderlands series, which I think is recorded in Texas since that's where Gearbox is based), J. Michael Tatum (who's also been in Borderlands 2), Luci Christian, Greg Ayres...

If Dave Fennoy can voice a krogan, I don't see why he wouldn't be good for a dwarf or a qunari.

Could not agree more. In a perfect universe, I really really want (wanted?) her to voice the female Inquisitor.
I just loved her voice SO MUCH.
And while we're shooting for the moon, I'd like Tom Hiddleston to voice someone anyone everyone.

Tom hiddleston as the British voice actor would be awesome! Well I would like him to voice someone in DAI if not the inquisitor himself.
Of course the voice in the Trailer that showed the different environments I could swear is Iain Glen! If anyone knows who it was please tell me!
Gwendoline Christie would be an awesome voice actor for the female inquisitor!
Jason Momoa as The Iron bull!
Sean Bean and Peter Dinklage as hmmm idk but I would like them play some sort of major role in DAI.
Ian McKellen or John Rhys-Davies maybe as the warden!
David Wenham as solas? idk
Oh oh Richard Armitage, Now he would be an excellent voice actor for the warden or some other major role!
Benedict Cumberbatch would be a good choice as well imo!

I would just be happy to have italian (of course it would be great for others languages too) VA, since is quite frustrating stop playng to read all the party banter. and with the small, white lettering of the subtitles is a nightmare for my eyes.
the team used for ME 1-2-3 was great. I would kill for Alberto Oliviero (Javik) or Claudio Moneta (male Shepard) as Inquisitor voices, and Cinzia Massironi (Female Shepard) would be great for a Dwarf/Qunari warrior. and Greta Bortolotti (Jack) would be great too. or for others characters.
a girl can dream, right?

I actually don't want too many celebrity voice actors brought on board; I've seen a lot of actors give voice acting a try and they just aren't nearly as good as they are on screen; there are exceptions, of course, but that seems to be the general rule of thumb from what I've seen. Also, I feel that when you're hiring a celebrity to do voice work you're not really paying for their voice talent, you're paying for the name and recognition that comes with it, and a lot of celebrities over charge for that.
And yes, I know I'm the one calling for Ron Perlman(specifically, to voice Iron Bull), but he is a regular voice actor along with being a tv/movie actor.

Yeah, I sort of agree with this. The skills involved in voice acting are often different than the skills you pick up in other forms of voice acting--PARTICULARLY on-camera acting--so it can be hard for actors used to one form to transistion when they're in front of a mic for the first time. Actually, Sean Astin, the guy that played Sam in Lord of the Rings (and a lot of other stuff), was recently on a podcast called Talkin' Toons with Rob Paulsen (another fantastic voice actor you should all look up, because odds are you guys grew up with him if you're anywhere near my age), and he actually talked about when he first started to voice act he wasn't very good because he didn't understand the differences. And I definitely think that sometimes more famous actors are hired just because they're well known, and I gotta admit that it bugs me sometimes, particularly when I think of how they could've gotten a more experienced voice actor for a lower cost and not only saved the project some money but possibly could've gotten a much better result.
(Like Patrick Stewart in The Elder Scrolls: Oblivion. I love him and he did a fine job, but he was only around for, like, a trailer and the tutorial level, and other than the other handful of celeb actors in the game the game has like...five people voice everyone else. I can't help but wonder if it would've been wiser to skip hiring the more famous actors to just give the rest of the game more actors over all..)
That being said, there are some "celebrity" actors that do quite well in video games! IMO I think actors with stage experience do better transitioning to voice acting than actors only known for on-camera work--I think it has something to do with both needing some projection with their voice. A lot of the Texas-area voice actors I like got their start in theater in Houston or Dallas (actually come to think of it, Laura Bailey is originally from that area and was invited to audition for Funimation after they saw her on stage!). Tim Curry also started on stage and he also tends to do very well, as an example of someone more well known. It seems like musicians, too, have an easier time--Troy Baker is an indie rock guy on top of being a voice actor, and a lot of that on-stage work I mentioned has been in musicals.
Plus sometimes actors are just good at it. I actually thought Martin Sheen as T.I.M. was fantastic and I can't imagine anyone else for the role, particularly in ME2. ...Of course I also felt like a few of the other "celebrity" appearances in the Mass Effect series were kinda pointless, so...yeah. I think probably the majority of the time I'm of the opinion that celebrity voice actors are probably not worth the cost to bring them in, but sometimes it works out. Really depends on the actor (and the director, and the part, and the game).

Speaking of Oblivion, Sean Bean was in that one and he did a very subpar job of it. He's a great actor, but he fell all kinds of flat in that role. Then in Fallout 3 they had Liam Neeson and he actually did a fair job, then in New Vegas they had Mathew Perry and he was horrible. Then in Skyrim Max von Sydow did a fantastic job.
So yea, Bethesda's really hit and miss with this.
There are certain actors who can pull it off. I agree, those with more experience on the stage probably have an advantage. Simon Templeman, who voiced Loghain and who is hands down my favorite voice actor ever, has a rich history in the theater before(and since) dabbling in voice acting.

I kind of want John DiMaggio to do the American Accent Male Inquisitor voice.
They probably already have someone cast for it, but that'd be my pick.

Oh man, Mathew Perry might be one of the worst I heard that wasn't a crappy licensed game. I totally thought he didn't care about the game at all until I saw an interview where he was like "I loved Fallout 3! I'm so excited I get to be in a Fallout game!" So..I guess he's just really bad at voice acting, poor guy. (Although I think that's one of those games that was pretty rushed, so maybe they just had to rush him through his lines, or something?
...Still, the dialogue in the sex scene if you're a female Courier and seduce him makes Origin's sex scenes seem really natural and classy.)

I always go that route when I play a female Courier, partly because it's the easiest way to kill him and partly because it is so damn hilarious.
I actually rather like Mathew Perry as an actor, and honestly, looking at it on paper, would have thought he'd be a great fit for the character. But my god did that not pan out.

Christopher Lee with his booming voice as an intimidating no-nonsense Knight-Divine (who makes Meredith seem ultra laid back by comparison)
Phil LaMarr (who was excellent as Ramza Beoulve) as a novice mage
Laura Bailey as a General Beatrix-type blindly faithful Templar/Chantry warrior ("I once killed 100 knights, to me you are nothing but insects")
Quinton Flynn as a smartass rogue ("got it memorized?")

Keith David as Iron Bull and all of the qunari.
Jeremy Irons as Gaspard (assuming he's in the game in some significant way).
Carey Elwes as Lord Littlefinger Lookalike, also called DHMG here.
Patrick Stewart as Solas.
Whoopie Goldberg as Vivienne.
Jennifer Hale as British Female Inquisitor (Bastila style).
Frank Langella as some sort of awesome villain.
