I have this problem where right now, the three characters I'm the most excited about are Cassandra, Iron Bull, and Beard Warden, who are all warriors, and I'm planning on playing a warrior, as well, and I'm given to understand that single-class parties are going to be a bad idea.

For my first playthrough where I'm going to play as a mage, I think I'll go with Varric, Cassandra, and the Grey Warden or Cullen if he is a companion and not an NPC.

I don't really think that would matter to me. My mage will have control/support abilities, helping the other party members and making the enemies more squishy. Worked just fine in the previous games for me, at least, and I mostly choose based on the characters and not on their classes anyway ;D.
Of course my choices can change if I see any other party members that fit better with my mage character. If I see a cool rogue character (I don't know much about Sera for her to interest me so far), they could take the place of someone, though I'm pretty set on having Varric and Cass in my party, and I love what little I've seen of the Grey Warden bara so far so it would take a lot to change my mind.

Apparently you can change weapon loadouts for characters; give either Cass or Beardy a two hander instead of a sword & board.

Not a bad idea. I might have a healer instead of a tank if I don't like the tank options as well.

Well I always play with two tanks, one mage and one rogue. Can you even play other way? XD I'm sure that you can but I haven't ever got other kind of team work, without two tanks my team is just too squishy and will be squashed like fly.

I think most use 1 tank, 1 two-handed weapon dps warrior, 1 mage, and a rogue. I suppose there is plenty of ways to do it though. I've actually done 1 tank, 1 mage dps, 1 mage healer, and a rogue.

True but as someone else said we can respec our companions within their class. So any warrior can be 2hand or Sword and board. Any rouge can be archer of dual wield and so on.
