I can't remember who has exactly what powers - so if you bring the most biotic team possible could you have a game of Colossus volleyball?

Pretty much.

Liara (Lift) + Kaidan (Lift) + Sentinel/Adept/Vanguard Shepard (Lift)* = Colossus hardly ever touches the ground. Bastion Sentinel/Adept Shepard can also use Stasis and shoot through it for damage.

 * You can give Lift to Soldier/Engineer/Infiltrator Shepard, but they do not have access to biotic amps or biotic cooldown bonuses in their passive to improve it much beyond the 40s cooldown of Master Lift, other than cooldown bonuses in armor mods.

You can't throw a Colossus enough for it to be fun.  To knock them, you need to play soccer with the Mako.

For just lifting, Bastion Shepard w/ Savant amp and twin Med Exos can perpetually lift them.  I think you can do it with just IX's, I know I didn't even finish the game with twin X's.

Sabotage works well on them too, though I suppose it's less fun than biotics.

If you're on PC, there's a way to edit the experience modifier when killing stuff with the Mako so you get the same as if you were on foot.

If you´re going to cheat on PC, you might simply use the console commands to make you start at level 60, with supergun and superarmor.

Because, of course, it's the same thing and you're not exaggerating at all.
