Maybe its just me but other than Varric(and even then not that much) I dont really feel a connection with any of the characters. It's not like in ME where Garius was Sheperds brother from another mother. If they keep switching the cast around it doesnt really allow me to develop feelings for them.

Bi: Iron Bull and ehhhh, I want to say Cassandra because I desperately want to romance her F/F, but I think Vivienne is more likely tbh

Well, I used to think that Cullen, Dorian and Solas would be the male romance options in some configuration. But now we know Iron Bull likes his wine, women people and song and Sheryl Chee says we're the gravy to Blackwell's rump roast. I'M SO CONFUSED.

Okay, so here are my guesses, now that we know a little more about some characters and the number of romances.
 
No LIs:
 
Leliana - confirmed
Cole - he's a Spirit and Gaider apparently doesn't consider him LI-material
Varric - If I remember correctly, one of the devs hinted at Bianca not being dead which means that she and Varric might find each other again - if that happens in a way that allows them to gert back together, he probably won't have much interest in the inquisitor (anymore)
Solas - time to stop making every elf companion a LI, we have IB has non-human LI this time
Vivienne - if they don't want to make every female around the Inwuisitor (except for Leliana) romanceable, she's the one who's not interested if you ask me. The Inquisitor is her boss and I think she's someone who would like to stay professional and separate love and work.
 
Female LIs:
 
Cassandra - confirmed LI; my guess is she's bi
Sera - confirmed LI and lesbian
Scribbles - I guess she's the straight female LI and the Counterpart to Cullen in that regard
 
Male LIs:
 
Cullen - confirmed LI; based on previous games I think he's straight
Iron Bull - "...will hop into bed with anyone he’s reasonably sure he won’t break." --> likely LI and bi
Dorian - they can't give him a moustache that awesome and not make him a LI; I guess bi (gay if I'm wrong about Blackwall)
Blackwall -  wouldn't it be cool if that whole bara thing was actually what they're going for? I hope and think it's entirely possible that he's the gay male LI

 

That would give as a total of seven LIs and a 2/3/2 ratio in Terms of sexuality.

I'm curious as to why everyone's so set on Iron Bull being non-dwarf, the thick, strong, hardy, tough, durable race, as opposed to non-elf.

I think because a big reason people think they might be going down the 'racial restrictions' route is due to resources, and therefore if IB were romanceable, dwarves are the most likely to be excluded from it as they have the largest variance in character models (height).

Well his quotes are on display in the Cassandra thread and the Romance thread, so you can go look for yourself. 

 

Personally it looks to me as if it's as good as confirmed, but there is just enough wiggle room in the statements to get out of it.

Sometimes, yes. I know that I (and I get the feeling it may be the same for David, though not necessarily in this instance) sometimes feel it more important to address the meaning or intent behind a question moreso than the actual question itself. I don't think that is the case here since his response started with a single "Yes.", but there is always the possibility that he was just adding some perspective to the topic and tempering people's expectations from getting too out of control. Which I don't think is a bad thing. Either way, I am 99% certain that we will learn about all possible variations of romances before the game releases just as we have with the previous Dragon Age titles. It's just a question of when.

As for racial restrictions...anyone who has a deep-seated issue with another race will likely not romance that race. My guess is Dorian won't like Qunari and Sera won't like humans. Scribbles we don't know enough about to give her any preferences. I'm not sure whether IB would think an elf/dwarf to flimsy to, ahem, "ride" him, but if he does, they're out. Cullen will at least date humans, elves, and mages, given how the Fem!Mage fit two of that criteria. Cassandra I doubt has any restrictions except maybe Qunari.

 

Of course, Bioware could just end all this speculation by telling us who is romanceable, their sexualities, and whether they have a race gate or not...? *hopeful look*

For the characters I think will be options, and know enough about to make a guess:

 

Cassandra: Humans, elves (if she liked dwarves she would have fallen for Varric, obviously, and she seemed to have a thing against qunari in DAII)

Varric: Dwarves, elves (He said he wasn't into humans in DAII, and apparently also has a thing against qunari)

Iron Bull: Qunari, Dwarves
