Right now the Standard and the Deluxe Edition für DA: I have been announced, but I was wondering if there will also be a physical collector's edition of the game with some goodies like a cloth map, a soundtrack CD and maybe some trinket like a pendant or a statue of a dragon etc.
Unfortunately there was no such collector's edition for DA 2 but I hope that there will be one for DA: I.

There will most likely be a physical edition, but don't expect much goodies.
There IS however the ghost of a special-limited-enthusiast-über-collectors-dragon edition floating around, which in all likelyhood is going to be a physical box with physical goodies. But there has been no conclusive word on that and neither do we know the price range for it, which can run from 80 bucks all the way to 300 bucks depending un how ultimately ultimate they want it to be.

There will be a Collector's Edition. Details have not been released yet on what it will contain but it should be fairly soon...my guess is right before E3.
I'm also guessing that some of the items will be a physical copy of the soundtrack, a cloth or leather map of Thedas and a replica of the Inquisitor's helmet.

They already said there will be one kind of Physical Edition but no Details yet.
I think they will give more Details latest at E3 (which is from June 10 - June 12 if I remember correctly).
Gamescom here in Germany is from August 13 - August 17. IMHO too late for such an Announcement (thinking from a Marketing-/Salespoint).
I too am waiting for more Details about the Content before I decide what Version I Pre-order.

The deluxe edition available for all consoles is a physical copy right? I figured that was like the DA2 Signature Edition, and that they just weren't calling it a collectors edition, even though that's essentially what it was/is.

Good thing the game comes out in October so I don't have to worry about preordering until September, which should give the devs plenty of time to announce the Collector's edition and its price.

For $300 I'll put that into a new videocard around release time.
